Three numbers do most of the work in a home kitchen: 40F in the refrigerator, 0F in the freezer, and two hours out of refrigeration. The FDA sets the first two, and USDA’s danger zone guidance sets the third. Learn those and you’ve covered most of what a food safety course would tell you.

What is the food storage danger zone?
The range between 40F and 140F, where bacteria grow most rapidly. FSIS says they double in number “in as little as 20 minutes” in that band. The FDA puts the same idea a different way: at room temperature, the numbers of bacteria that cause foodborne sickness can double every 20 minutes.
Twenty minutes is a genuinely short time, and it explains the two-hour rule better than the two-hour rule explains itself. Two hours is not a safety margin. It’s roughly the point at which the math stops being in your favor.
Above 90F, which covers a car, a patio, or a kitchen in August, the limit drops to one hour.
Why is proper food storage important?
Because storage is where most of the risk actually sits. FSIS names the two main causes of foodborne illness as not cooking food to a safe temperature and leaving food out at an unsafe temperature, and separately calls improper cooling of cooked foods “one of the most common causes of foodborne illness.”
Notice that neither of those is about buying bad food. They’re both about what happened after the food was already fine.
The other reason is money. USDA estimates 30 percent of the food supply is lost or wasted at the retail and consumer levels, and cites confusion over date labels as one driver. A fridge running at 45F quietly shortens everything in it. That’s groceries you paid for, going out in a bag.
What order should food go in the fridge, top to bottom?
Illinois Extension gives a clean shelf order, and the logic is entirely about what drips onto what.

Riskiest at the bottom, ready-to-eat at the top. The door is the warmest part of the fridge, which is why it holds the things that can take it.
How do you know your fridge is actually at 40F?
You measure it, because the dial is not a thermometer. The FDA notes that few refrigerator controls show actual temperatures and recommends an inexpensive freestanding appliance thermometer for the fridge and another for the freezer.
Illinois Extension gives an actual procedure. Put a thermometer in a glass of water in the middle of the refrigerator, wait 5 to 8 hours, and adjust the control if the reading is not 38 to 40F. For the freezer, put the thermometer between frozen packages, wait 5 to 8 hours, and adjust if it isn’t 0 to 2F.
Two more things both agencies flag. Don’t overpack, because cold air has to circulate. And wipe up spills promptly, since the FDA specifically mentions reducing the growth of Listeria, which can grow at refrigerated temperatures.
What about the pantry?
This is the one place the numbers diverge. FSIS says temperatures below 85F are best for canned and shelf-stable goods, and that temperatures over 100F are harmful, with spoilage risk rising sharply as storage temperature climbs. Illinois Extension recommends a tighter 50 to 70 degrees.
Both rule out the same places: above or beside the stove, under the sink, in a damp garage, or anywhere with big temperature swings.
