I used to think sourdough was a lifestyle choice that required a color-coded calendar and a total lack of social obligations. If I wanted pizza on a Tuesday, I was supposed to have started the dough on Monday morning, right? Wrong. Most of us don’t live in a world where we can predict our carb cravings twenty-four hours in advance.
The truth is, you can absolutely make sourdough pizza dough same day without sacrificing that tangy flavor or the chewy crust your family actually likes. The secret isn’t magic or some hidden artisan technique. It’s just a little bit of help from a packet of instant yeast. It might feel like cheating to the purists, but those people aren’t trying to feed a hungry household before soccer practice starts.
The hybrid method for speed
To get a sourdough pizza dough ready in a few hours, we use what’s called a hybrid dough. You’re combining the flavor of your sourdough discard with the reliable, fast-acting power of commercial yeast. This isn’t a project, it’s a utility.
The sourdough starter provides the acidity and the structural integrity that makes the crust taste like something from a fancy wood-fired oven. The instant yeast handles the heavy lifting of the rise so you aren’t waiting until midnight to eat. You’ll want to aim for a hydration level that’s manageable. If the dough is too sticky, you’ll end up frustrated and covered in flour, which is the opposite of a life hack.
Temperature is your best friend
If you want to speed things up even more, you need to pay attention to the environment. Yeast is a living thing, and it likes to be warm. I’m not saying you should turn your kitchen into a sauna, but putting your dough bowl in a turned-off oven with the light on can shave an hour off your wait time.
A warm spot helps the dough double in size much faster than a drafty countertop. Just don’t get overzealous and put it on a radiator or near an open flame. You want a gentle proof, not a slow cook.
